The wine San Roman is the product of Bodegas Mauro’s work in Toro where Mariano Garcia was involved in a new wine project. Mariano’s interest in Toro began in 1995, studying various terroirs with different microclimates and the characteristics and potential of the Tinta de Toro and Garnacha grape varieties. The purpose of these experiments was to produce powerful yet elegant wines with subtle tannins and alcohol-acidity balance.

Harvested 15-25 hectoliters/hectare only by hand in small boxes starting on September 25 and lasting two weeks. Varieties and vineyards were vinified separately to respect the characteristics of the different terroirs. The wine was fermented/macerated for 20 days and aged for 22 months in new French oak and semi-new American oak barrels. Bottled without filtration in March 2007.

Dark purple. An intensely perfumed bouquet evokes blackberry, mulberry, vanilla and exotic Asian spices. Deep and sweet, with powerful dark berry liqueur flavors underscored by strong oak spice. But the wood is in sync with the deep, concentrated fruit and adds serious sex appeal. A round, supple wine with impressive energy and focus. Becomes chewier with air and finishes with superb sweetness.

The 2004 San Roman, 100% Tinta de Toro, was aged for 22 months in French and American oak, mostly new, prior to bottling without filtration. It is purple-colored with a lovely perfume of toasty oak, mineral, spice box, violet, lavender, and blackberry. Sweet, layered, and structured, this muscular effort will evolve for 5-7 years in the cellar and drink well through 2025.

About as good as it gets in terms of a powerful, fully oaked modern wine that still guards its core identity while offering plenty of straightforward drinking pleasure. San Roman in 2004 is a high-speed train with agile fruit and bracing acidity more dominating than, say, tannic might or alcoholic heat. Among the brave new world of modern wines from Toro this is one of the very best. Editor's Choice.
