Shake together in a mixer with ice. Strain into glass and serve.

1 ounce light rum
1 ounce blue Curacao
2 ounces pineapple juice, unsweetened
1 ounce crème of coconut (optional)


Combine rum, blue Curacao, pineapple and coconut juices, stir or shake, pour over ice to near top of glass. For garnish score pineapple or orange slice with a knife and insert onto rim of glass; optionally use toothpick or cocktail umbrella to spear maraschino cherry through center and attach to top of fruit slice; otherwise float cherry on top of ice.
May be served frozen or as a rum punch.

Brass Monkey is a cocktail consisting of equal parts light rum, dark rum, and orange juice.

Pulp-free orange juice and dark rum is preferable.
In South Florida some bartenders do another variation called Cuban Sunrise; simply 1/2 rum (light or dark depending on the patron's preference) and 1/2 orange juice.

Wash the lime and roll it on the board to loosen the juices. Cut the lime into pieces and place them in a glass. Sprinkle with the sugar and crush the pieces (pulp side up) with a pestle. Just enough to release the juice, otherwise it'll get bitter. Add the rum and stir to mix, add the ice and stir again.

Combine ingredients in glass and stir. Squeeze the lime slice into the drink and garnish with the pith.

1 pint (~13 parts) beer


Layer the two spirits in the shot glass, with the 151 on top. Light the shot and allow to burn, then extinguish by dropping it into the beer glass. Drink immediately.

Mix ingredients in glass over ice, stir, garnish with a lemon slice and serve.

2 parts guava juice
1 part lemon juice
Sugar to taste


Shake the ingredients together in a mixer with ice. Strain into a highball glass over more ice and serve well chilled.

3cl (6 parts) white rum

1.5cl (3 parts) orange curaçao
1.5cl (3 parts) Orgeat syrup
1cl (2 parts) fresh lime juice

Shake all ingredients except the dark rum together in a mixer with ice. Strain into glass and float the dark rum onto the top. Garnish and serve.

1/4 cup fresh mint
1/4 lime cut into a wedge
2 Tbsps lime juice
1 Tbsp sugar
1/2 cup ice
1/2 cup rum
2 Tbsps club soda

Simple Syrup
1/4 cup water & 1/4 cup superfine sugar.

In a saucepan over high heat bring the water to a boil.
Add the superfine sugar and mix until it completely dissolves. Cool completely before using it in the rest of the recipe.
Drop the mint into a tall drinking glass. Add the lime wedge, lime juice, and sugar. Using a spoon mash up the mint till it combines well with the the lime and sugar. Fill the glass to the top with ice. Add the rum until it reaches halfway up the glass. Pour in the simple syrup until it almost reaches the top of the glass.
Top with soda water. Garnish with a lime and sprig of mint.

A mojito royal is made from the traditional ingredients: spearmint, rum, sugar (traditionally sugar cane juice), lime, the last ingredient is champagne instead of carbonated water.

1 part Kahlua
15 parts Vanilla Ice Cream
10 parts Whole Milk
1½ parts Whipping cream
Dash Vanilla extract
Dash Nutmeg


Beat yolks until fluffy and completely mixed, Add sugar to eggs and beat until thick and smooth. Add/Stir in milk and liquor. Chill for a min of 3 hrs. Whip the cream until good and thick. Fold in whipped cream. Chill for 1 hr. and sprinkle top with nutmeg and cinnamon to taste (optional). Serve in punch bowl keep remainder of mixture chilled because of the raw eggs.

Mix ingredient together in a punch bowl or pitcher with ice. An island favorite and easy to remember too – one of sour, two of sweet, three of strong and four of weak!

Mix ingredients other than the 151 in a shaker with ice. Pour into glass and top with the high-proof rum.
Because of the high proof rum, this cocktail could be lit if desired.
