After harvesting the different varieties are separately fermented. The wine undergoes a long maceration of 24 days at a temperature of 26ēC to 28ēC, followed by the malolactic fermentation. The wine is then aged in French and American oak barrels for 6 months prior to bottling.

Bright ruby. Dark berry and cherry aromas are a bit reduced initially but open slowly to show suave floral and mineral qualities. Sweet raspberry and blackberry flavors are youthfully exuberant and nicely focused, with no obvious tannins or rough edges. Finishes with pleasant juicy lift and good persistence. This is drinking well right now.

The 2004 Los 800 is composed of 82% Garnacha with the balance Carinena, Cabernet Sauvignon and Syrah aged for 6 months in French and American oak. Medium to dark ruby-colored, the bouquet reveals spice box, mineral, cherry, and blueberry. This is followed by a ripe, layered wine with gobs of sweet, savory black cherry and blueberry flavors, excellent concentration, and a lengthy finish. This tasty effort is an excellent introduction to the wines of Priorato. Drink it over the next 5-7 years.
