This wine is produced from grapes grown in the heart of Sant Sadurni d’Anoia, the birthplace of Cava, among the high altitude hills of the subregion of Espiells. The grapes are harvested early to maintain naturally fresh, crisp acidity and are then fermented in temperature controlled stainless steel to maintain the optimum of bright fruit aromas. The base wines are then blended and bottled with a bit of yeast to age for 18 months on lees prior to disgorging. Time on lees is balanced to allow clear aromatic sense of the crisp, red fruits of the Trepat and Pinot Noir along with some complexity from the yeast. The dosage is made with the most neutral flavored liquor to allow the flavor of the original grapes to shine. Total residual sugar: 10.8 grs/liter.

Light pink, with fine bubbles. Nervy blood orange, redcurrant and strawberry aromas are enlivened by notes of clove and cracked pepper. Clean and precise, offering refreshingly bitter red berry skin flavors and very good palate coverage. Finishes brisk and clinging for a wine at this price-for a wine at two or even three times the price, actually.

From the very birthplace of Cava itself, this wine brings the joy of bubbles to causal fare while being light on the wallet. It’s a treat for the eye as well with its medium-deep reddish pink color. A brut, its 10 grams of residual sugar are well within the limits for brut. Prepare for a trip back in time to childhood, as this medium-bodied dry sparkling wine puts forth aromas of candied apple and cinnamon hearts. The palate amasses a bouquet of red fruits, from pomegranate to raspberry to red currant. The crisp, clean finish makes it lovely for a wide variety of foods. This is an exciting value. Foods: five-spice powder dusted slow-roasted pork belly with apple juice; barbecued ribs or chicken; mildly seasoned chili or Brunswick stew; roast ham or grilled ham steak; pork or duck rilletes; Mongolian beef and other Asian meat and chicken dishes with spice, Serrano ham, paella.
